Stuffed Tofu With Shrimp and Pork

Ingredients

10 shrimp, shelled and deveined
1/2 teaspoon cornstarch
1/4 teaspoon salt
1/4 teaspoon black pepper
1/4 teaspoon sugar
1/4 cup oil

Preparation

Drain tofu and slice into eight pieces (approximately 2" x 1 1/2")

Using the back of a knife, smash shrimp, then mince finely to form a paste. Transfer to a medium bowl and thoroughly knead together the shrimp paste, pork, cornstarch, salt, pepper and sugar.

Slice tofu pieces almost in two and very gently stuff the cavity with a tablespoon of shrimp and pork paste.

Heat oil in a nonstick frying pan until hot and carefully add the stuffed tofu. Turn heat to medium and cook, turning occasionally to ensure an even golden-brown color.

Remove tofu from pan and place on a paper towel-covered plate to absorb excess oil.
