Seafood Saganaki

Ingredients

3 tablespoons olive oil
cup onion, chopped
3 clvs garlic, chopped
5 lrgs bay scallops
5 jumbo shrimp
7 PEI mussel
cup tomato, chopped
1 tablespoon fresh basil
5 ounces cleaned squid
ounce dry white wine
ounce pernod
cup feta cheese, crumbled
1 salt and pepper, to taste
parsley, for garnish

Preparation

Heat olive oil in pan.

Brown onion and garlic.

Add scallops, shrimp and mussels.

Saute for 3 minutes.

Add chopped tomato and basil.

Saute for 1 minute, then add squid.

Splash with white wine and Pernod.

Flambe if so desired.

Saute for 1-2 minutes, depending on heat of the pan, then add feta cheese.

Salt and pepper to taste.

Garnish with parsley.
