Greek Souvlaki
Ingredients
* 1 lemon, juiced
* 1/4 cup olive oil
* 1 teaspoon dried oregano
* 3 cloves garlic, crushed
* 4 pounds pork tenderloin, cut into 1 inch cubes

1.In a large glass bowl, mix together lemon juice, olive oil, oregano, and garlic; add pork, onions, and red peppers, and stir to coat. Cover, and refrigerate for 2 to 3 hours.

2.Preheat grill for medium-high heat. Thread pork onto skewers.

3.Lightly oil grate. Cook for 10 to 15 minutes, or to desired doneness, turning skewers frequently for even cooking.
