Norscas
Ingredients
3 1/8 cups all-purpose flour
1 1/4 teaspoons salt
2 teaspoons baking powder
1 1/2 soda(if using sour milk)
4 eggs
5 1/4 cups milk

Slightly beat the eggs into large bowl.

Add milk to the beaten eggs.

Sift dry ingredients into the egg and milk mixture.

Beat until smooth, batter will be thin.

Pour approximately 1/4 cup batter into hot greased 10" frying pan.

Pick up pan and swirl batter until it covers bottom of pan.

When norsca pulls away from pan, flip over.

Brown on other side.

Roll into tube and enjoy.

My dad's dad brought this when he emigrated from Norway in the early part of the 20th century. When I was growing up I didn't know it was a "crepe". My grandfather travelled from Ellis Island to Washington state and worked as a cook in logging camps. I've also heard he made delicious bread; he died before I was born, but this recipe lived on. The "sour milk" mentioned in the recipe would be equivalent to the thin, non-fat or low-fat buttermilk available today.
