Peach, Ham and Feta Salad with Fruity Olive Oil Dressing

  • salt
  • black pepper
  • croûtons(optional)
  • 4 small peaches
  • 2 tablespoons peach juice
  • 4 thin slices Parma ham(optional)
  • 100 grams wild mesclun leaves
  • 2 tablespoons cider apple vinegar
  • 150 grams marinated feta in oil
  • 2 tablespoons olive oil

Instructions

Step 1

In a small bowl, combine 2 tablespoons of the reserved oil from the marinated feta with the olive oil, cider apple vinegar, and peach juice. Season the dressing with salt and pepper and set aside.

Step 2

Tear the slices of ham into smaller pieces. In a large bowl, toss the ham pieces with the mesclun leaves and peaches.

Step 3

Divide the salad among serving bowls or plates. Drizzle with the prepared dressing, reserving any extra in a jug if there is too much. Crumble the feta over the top and scatter the croutons.

Serve the salad immediately, optionally with crusty bread and chilled white wine.
