Oregano Prawns

Ingredients

625 grams large raw (tiger) prawns shelled and cleaned
2 thsp olive oil
1 juice of 1 lemon
3 tablespoons fresad
300 grams cooked peeled large (tiger) prawns
1 juice of I lemon .
2 teaspoons horseradish relish or sauce
100 grams rocket washed

Preparation

If using frozen prawns ensure they are defrosted and absolutely dry.

Place in a bowl.

Whisk together the oil lemon juice and horseradish.

Season with salt and pepper to taste adding more horseradish depending on the strength of your jar of relish or sauce.

Pour over the prawns and leave to marinate for at least one hour somewhere cool but preferably not in the fridge.

Stir occasionally to coat the prawns.

Just before serving place the rocket in a large shallow salad bowl then pour the prawns and their marinade over the top.

Toss gently together

If you are using wasabi instead of horseradish use about half the amount. Offer plenty of warm crusty bread with this salad to dunk in the dressing.
