Hazelnut Honey Pie
Ingredients
6 tablespoons unsalted butter
2 cups hazelnuts shelled
3/4 cup light corn syrup
1/4 cup honey
1 cup sugar
3 lrg eggs
1 teaspoon vanilla
1/8 teaspoon salt
1 9 inch pie shell unbaked
2 cups whipped cream garnish

Preheat oven to 350F.

While butter is browning, toast and skin hazelnuts: Place hazelnuts in single layer on half sheet pan. Bake 10 to 12 minutes, shaking pan occasionally. Remove pan from oven. Allow nuts to cool slightly. Place in a clean towel and rub together to remove some of the skins. It is not necessary to remove all of the skins. Cool completely. Coarsely chop half of the hazelnuts. Leave remainder whole. Raise oven temperature to 425F.
