Green Salad With Orange Vinaigrette

Ingredients

6 - 8 cups salad greens, Bibb 1 cup x and ½ oranges, peeled, seeded and chopped
1/4 cup black olives, sliced
1/4 cup Feta cheese, crumbled
Dressing
1/2 teaspoon dry mustard
1 tablespoon olive oil
1 garlic clove, minced
Salt and pepper to taste

Preparation

Combine salad ingredients and toss. Combine dressing ingredients and shake well. Pour over salad and toss just before serving.

Chefs Notes: Feta cheese is low in fat and black olives contain the "good" type of fat.
