Spinach and Rice Pilaf

Ingredients
1 tablespoon extra virgin olive oil (evo)
1 cup white rice
2 cups chicken stock
2/3 cup of Parmesan Cheese
Preparation

Heat evo in sauce pot over medium heat. Add the orzo and toast until grain is deeply golden in color, about 4 to 5 minutes. Stir in white rice and toss. Reduce the heat to a simmer, cover and cook 16-17 minutes until tender. Site in the chopped spinach and Parmesan cheese, toss to combine. I usually add more Parmesan cheese because it provides for an extra creamy mixture. Transfer and serve.

Substitute spinach with arugula or any bitter green.
