Fresh and Spicy Tomatillo Pico De Gallo

Ingredients
10 mediums tomatillos, finely chopped
1 medium tomato, seeded and finely chopped
1/2 cup red onion , finely chopped
1 medium Anaheim pepper, finely chopped
1/2 small Jalapeno pepper, finely chopped
1 clove garlic minced
1/4 teaspoon salt
1/4 teaspoon sugar
1/2 cup cilantro, chopped
2 teaspoons lime zest
1 small lime, juiced

Combine all ingredients in a bowl and chill for 30 minutes.

Fresh is best! That’s my motto, and I think it’s a good one. I so much prefer a Pico de gallo over a jarred salsa any day, and who wouldn’t? Everything in the dish is chopped from fresh, whole veggies and herbs. Sounds like it would take a lot of time to make, doesn’t it? Not the truth. Ten minutes of chopping and we were test tasting.
