Question: Kitchen upgrade advice

We entertain with rather over the top dinner parties for 12 to 16 and are thinking of a serious upgrade to our kitchen. Some of the things we are toying with putting in the new kitchen include a steam oven, a sous vide bath, flash freezer and very large, probably commercial, fridges and deep freezer. Are there any other very useful devices that we should consider and is a flash freezer worth getting in a domertic environment? .

A warming or cooling drawer would be very effective! I don't see the need for a flash freezer because I assume you're preparing most of your ahead ahead of time, unless, like you said, you would need it for production uses (i.e. ice creams, jams etc.)

It sounds like you're putting together my dream kitchen. (I'm available for adoption by the way). A few things I would consider:
A wood burning oven for bread, pizza or just to cook in.
A kitchen scullery -(I love the commercial style washers)
A large teppanyaki style grill. (I saw a 3 ft round one that I was infatuated with).
As far as the deep freezer goes- consider an upright- the organization is so much better and they are so much more efficient than in the past.
