Most colonial bakers used wheat and the bread was leavened. The average baker did not make fancy, designer breads. The average household consumed ordinary wheat bread, that sometimes doubled as a plate. That way, the food juices were absorbed in the bread and eaten. Wheat was not as refined and most used a type of whole wheat. The wheat was not ground as fine as the wheat today.
