Raw egg yolks can usually be stored safely in the fridge (covered) for up to 3 days. If it will be longer than that, consider freezing them. They will become gelatinous in the freezer most often without some preparation.
To freeze them- mix 1/8 teaspoon of salt or 1-1/2 teaspoons of sugar or corn syrup with every four yolks you freeze to inhibit their becoming gelatinous.
I would label them with both the date and what you mixed in with them so that you don't ruin a recipe. They will keep 4-6 months frozen.
How many yolks are you talking about? I wouldn't monkey around with freezing them. Use them up in the next couple of days. Make some rich scrambled eggs or custard or an old fashioned egg nog.
