Question: How do you make pomegrante topping for a cheesecake?

November 15, 2010
I have seen just about everything for topping a cheesecake, but I have never seen a pomegranate topping. I think it sounds good and would love to try it. I just don't know how to make it. Could someone please share a recipe? Thank you, Beth

You could make the cheesecake and then make a pomegranate sauce-
Use 2 cups pomegranate juice (either a concentrated POM or fresh pressed through a sieve)
1/2 cup fresh pomegranate seeds
1/4 cup packed brown sugar
1 tablespoon cornstarch
Bring juice to a boil in a saucepan. Reduce heat, boil gently, uncovered, until reduced to about 1 cup (about 15 minutes). Stir together the sugar and cornstarch and whisk into the juice. Cook and stir until thickened and bubbly. Add fresh pomegranate seeds and cook for 2 more minutes. Transfer to bowl; cover surface with clear plastic wrap. Cool to room temperature
