The perennial plant has dark green, heart shaped leaves. Both leaves and root have a spicy flavor. Foraged in Northern California up the west coast to Canada and also in Idaho. Wild ginger roots are harvested in the fall. Rinse the roots in several washes of water, slice and dry the roots in the oven and store in an air tight container.
