Ras El Hanout is a Moroccan spice blend that can be used on meats and roasted veggies or in soups and stews. This blend is also used in Algerian and Tunisian cuisine, and the blend ingredients vary from home to home and region to region.
In my kitchen, Ras El Hanout is a blend of cumin, paprika, turmeric, coriander seed, fennel, cardamom, cinnamon, clove, ginger, allspice, nutmeg, red & black pepper, salt, and even sugar.
