Langoustines

About
The langoustine is a small lobsterlike creature, resembling a large prawn with small claws. It is sometimes served whole, but more common presentations include only the tail. It can be grilled, poached, or sauteed, and used in many recipes that call for either shrimp or lobster. Butter and garlic both go well with langostines. Langoustines also make a great last-minute addition to seafood stews such bouillabaisse and cioppino.
Significant care must be taken in working with langoustines, as they cook quickly and if overcooked become rubbery and unappetizing.
