Figs, almonds and chocolate chips cake

Ingredients

200 g of flour
50 g of cornstarch
70 g of almond flour
120 g of milk (also soy or almond milk)
2 eggs
100 g of brown sugar
100 g of soft butter
1/2 cup of dark chocolate chips
1 teaspoon vanilla extract
1 teaspoon of ginger powder
1 lemon zest
2 teaspoon of baking powder for cakes
400 g of fresh figs
A pinch of salt

Preparation

Preheat the oven to 180 degrees.

Remove the skin and cut the fresh figs in half.

Combine the flour, cornstarch, almond flour, chocolate chips, ginger powder and, baking powder in a bowl and mix with a fork.

Whisk the butter with the brown sugar and a pinch of salt until it becomes soft and fluffy. Lightly beat the eggs and add them gradually to the mixture, stirring gently.

Gradually add the flour mixture to your butter mixture alternating with milk. Add the vanilla extract and the lemon zest. Mix until combined.

Pour half of the batter into the prepared pan and spread it evenly to the edges with a small offset spatula.

Arrange a first layer of fresh figs and carefully spread the remaining batter over it to the edge of the pan.

Arrange a second layer of figs on top and sprinkle the brown sugar on top.

Bake until the top is puffed and browned, 45-50 minutes. Check this by inserting a skewer in the cake: it’s done if it comes out clean.

Remove the cake from the oven and allow it to cool down before taking it out of the pan.
