We love entrée salads! They're a great way to load up on your greens and feel full and satiated at the same time. This Caesar Salad recipe is easy to make and so delicious when tossed with tender tortellini pasta. We like cheese, chicken or spinach filled tortellini, but choose a flavor that suits your taste. If you're using a store-bought Caesar dressing, we recommend a low fat one to keep calories down. We use our own eggless Caesar dressing, which contains just lemon juice, anchovy paste, and olive oil - no yolks! Try it here for a low-cholesterol version,
Tortellini Caesar Salad

Ingredients:
1 bag of frozen tortellini (flavor of your choice)
1 small head romaine lettuce, chopped
½ cup grape or cherry tomatoes (optional)
½ cup chopped cucumber (optional)
½ cup croutons
3 tablespoons grated Parmesan cheese
½ cup Caesar dressing (homemade or store-bought)
Directions:
Step 1. Bring a large pot of salted water to a boil. Cook the tortellini according to package directions. Drain and reserve.
Step 2. Once cooled, combine lettuce, cooked tortellini, and optional vegetables. If not eating right away, reserve.
Step 3. Toss with dressing, cheese, and croutons (to taste) and serve.
