Oaty Ginger Crunch
Ingredients
Base
150g butter
3/4 cup Low GI sugar (brown sugar if you aren’t going the Low GI route)
2 tbsp golden syrup
3/4 cup plain flour
1.5 tsp baking powder
1.5 tsp ground ginger
1.5 cups whole oats
3/4 cup desiccated coconut
Icing
150g butter
2 cups icing sugar, sifted
3 Tbsp golden syrup
4 tsp ground ginger
Preparation

Preheat the oven to 180c. Line a slice tin with baking paper.

Melt the butter, sugar and golden syrup in a large pot over a medium heat, stirring to combine. Once all mixed together, remove from the heat.

Sift the flour, baking powder and ginger into the pot and then add the oats and coconut. Give it a good stir to combine everything together.

Press the mixture into the tin and smooth out either with your hands or the back of a spoon.

Bake for 15 minutes then leave in the tin to cool on a rack.

While the slice is hanging out, heat all of the ingredients for the icing into the same pot (rinsed out of course), stirring over a medium heat until everything has melted.

Poor over the slice and leave to cool. Once cool, cut into slices!
