I don't know about you but whenever I decide to go on a diet, I immediately start craving junk food (my mind likes to play tricks on me). I can go months and months without indulging in a cupcake but the minute I restrict myself, all I can think about are moist cupcakes piled high with cream cheese frosting. I have begun collecting healthy dessert recipes to tame my sweet tooth. While this may sound like an oxy moron, in truth, they are just a better way to eat some of my favorite foods. I get to feel like I am indulging in something sinful while also staying on course to shed my holiday pounds. These recipes stay away from gluten, refined sugars, and limit fat. Until I meet my cupcake again, these delicious substitutes work wonders.
Healthy Peanut Butter Oatmeal Cookies
Recipes from Bris Daily Delights
2 Ripe Bananas, Mashed
1/3 cup Organic Crunchy Peanut Butter
2/3 cup Unsweetened Applesauce
1 Tsp. Vanilla
1/2 Tsp. Salt
1/2 Tsp. Cinnamon
1 1/2 cups Quick or Old Fashioned Oats
1/4 cups Nuts (I used dry pecans.)
1/4 cup Semi Sweet Chocolate Chips
1/4 cup Shredded Coconut
Coconut Oil Chocolate Fudge
1 cup coconut oil, melted
1/3 cup coconut milk
1/3 cup cacao or cocoa powder
1/3 cup honey
2 teaspoons vanilla extract
Baked Pears with Walnuts and Honey
2 large ripe pears
1/4 tsp ground cinnamon
2 tsp honey
1/4 cup crushed walnuts
