Slow cooker shredded beef fajitas is a sure fire way to get the family to convene around the table. You can set this meal to cook at night while you are asleep and have it ready to eat by the morning. Flank steak is full of connective tissue that breaks down when it cooked low and slow which makes it the perfect cut for this dish. The beef is seasoned with onions, garlic, tomatoes, chiles and spices. Spoon the filling into flour tortillas and serve with fresh cilantro, sour cream and cheese.

Ingredients:
1 1/2 lb Flank Steak
2 Tbsp of Vegetable Oil
3 Red Bell Peppers, cut into 1/3” strips
2 Large Yellow Onions, sliced into half moons about the same thickness as the peppers
6 Cloves of Garlic, chopped
8 oz can of Diced Tomatoes with Chilies
1 Tbsp of Chili Powder
1 tsp of Cumin
1 tsp of Granulated Garlic
1 tsp of Granulated Onion
1 tsp of Paprika
1/2 tsp of Ground Coriander
1/2 tsp of Oregano Salt and Pepper, to taste
