Michael Mina’s Caviar Parfait Recipe

This week’s exclusive recipe comes from Michelin-starred and James Beard Award-winning chef Michael Mina whose culinary excellence will be on full display as he hosts A Harvest Dinner at his eponymous Bellagio restaurant, Saturday October 5.

Caviar Parfait
MICHAEL MINA Bellagio
Chef Michael Mina
(Serves 10)

Caviar and Smoked Salmon:
10 oz  oestra caviar
2 cups  smoke salmon, diced

Potato Cake:
4, Russet potatoes
1 bunch, fine herbs, chopped
2, egg whites
2 Tbsp. salt
2 Tbsp. potato starch
Oil for frying

Procedure:
Bake potatoes in 375º f oven until tender but not soft, approximately 30 minutes  Grate potatoes using a hand grater, and mix in the herbs, egg whites, salt and potato starch.  Mix well.  Shape cakes into 2 ½” diameter mold.  If cakes are not wet enough to stick then add more egg white.  Deep fry at 350º f until golden to order.

Egg Mixture:
7 eggs, hard-boiled
2 tsp. parsley, chopped
2 tsp. red onion, minced
Salt and pepper to taste

Procedure:
Separate yolks and whites and sift through a small strainer.  Add parsley and minced red onion – season with salt and pepper.  Separate out 5T for garnish.

Horseradish Crème Fraiche :
1 ½ cups crème fraiche
1 tsp. horseradish
2 tsp. lemon zest, chopped
2 tsp. chives, chopped
Salt and pepper to taste

Procedure:
Mix together and season to taste, whip until stiff

Dill Oil:
½ bunch dill, blanched
½ cup canola oil

Procedure:
Puree dill in blender with oil and season to taste

Preparation:
On a medium dinner plate, place potato cake in center.  

Using ring mold, layer on top of potato cake – 1) egg mixture, 2) diced salmon, 3) horseradish crème fraiche and 4) caviar.  Garnish plate with remaining egg mixture and dill oil.
