You know those days when you walk in the door and then it occurs to you that there is nothing for dinner? I get those too, so this recipe for quick and easy lasagna cups is a lifesaver. I love anything made in muffin tins, but lasagna is probably the best tasting.
The only tip I would add would be to use a bit more sauce than you think you will need. The extra moisture makes the wonton skins tender and delicious. I also think it needs to be topped with sauce and cheese to keep the wonton layer from becoming too crispy. It takes 4 cups per person, to feed teenagers and hungry husbands. 2 were plenty for me and my 3 younger kids. Add a salad and garlic bread, for a complete meal.
