Chiambotta

Ingredients

1 large zucchini
1 large onion
3 Bell peppers
1 can crushed tomatoes
1 box peas or string beans, the more vegetables, the better

Preparation

Saute onion and garlic in a few tablespoons of oil. Cook until tender. Add zucchini and remainder of ingredients. Cook until everything is the way you enjoy it. Add crushed tomatoes; simmer 10-15 minutes. Serve as a side dish or main meal (as a main meal, you can add small meatballs).
