New Zealand Cake

Ingredients

1 cup sugar
2 eggs, beaten
3 cups flour
1 cup milk with 2 tsp. baking soda mixed into 1 teaspoon lemon extract
Raisins and nuts to taste

Preparation

Mix sugar and beaten eggs together and slowly add flour. Blend in milk. This will make a stiff batter. Add lemon extract, nuts and raisins. Bake in a tube pan at 350 degrees for one hour.
