Mojito Shrimp

Ingredients

1 pound shrimp, deveined and peeled. 21-30/lb size
2 teaspoons fresh lime juice
Mint sprigs
MOJITO MARINADE: Combine next ingredients:
20 fresh mint leaves, chopped
cup sugar
1 thinly-sliced shallot
3 teaspoons fresh lime juice
1 teaspoon olive oil
1 teaspoon freshly grated lime zest
1 teaspoon kosher or sea salt

Preparation

Prepare a gas or charcoal grill for high heat

Put shrimp in plastic bag and marinate 15-20 minutes

Thread shrimp on bamboo skewers, reserving marinade

Arrange shrimp on grill, baste with marinade

Close lid and cook for 1 to 2 minutes

Turn shrimp, baste again, cook for another 1 to 2 minutes

Transfer to a platter, drizzle with lime juice, garnish with mint

About

Note: Don't marinate for more than the recommended time, or the rum and lime juice will "cook" the shrimp and ruin the texture.
