Black Risotto

Ingredients

Splash of olive oil
1 small Onion, chopped
100 grams Arborio rice
4 Sachets of squid ink
50 ml Red wine
200 ml Strong fish stock, simmering
1/2 Clove garlic, crushed

Preparation

Sweat the onion in the oil and add the rice, the wine and the ink, stir and add the stock ladle by ladle (15 minutes-ish).

Stir in the garlic, season and serve.
