Mango Snacks

Serve ripe slices of mango after dinner with lime slices to squeeze over them. The sour highlights the sweet.

To make a mango lassi: whizz up 3 small ripe chilled mangoes with about 5 tbsp of low fat chilled yoghurt and 1 tbsp of iced water. For an alternative make a lime sugar syrup by heating 2 tbsp of caster sugar with 3 tbsp of lime juice then leave to go cold. Use this instead of the water in the lassi.

For a midnight snack smother toast with sweet mango chutney top with cheddar cheese and grill until bubbling.
