Baked Potato Soup

Ingredients

4 lrg baking potatoes
2/3 cup butter or margarine
2/3 cup flour
7 cups milk
4 green onions chopped
12 slc bacon cooked, crumbled
1 1/4 cups shredded cheddar cheese
1 teaspoon freshly-ground black pepper

Preparation

Bake the potatoes until done. Let cool. Peel and cube.

Melt butter in a soup kettle or Dutch oven. Stir in flour. Heat, stirring until smooth. Gradually add milk, stirring constantly, until thickened. Add potatoes and green onions. Bring to a boil, stirring constantly. Reduce heat and simmer 10 minutes. Add bacon, cheese, sour cream, salt and pepper. Stir until cheese is melted.
