Reduced-fat Oatmeal Cookies

Ingredients
3/4 cup reduced-fat margarine, softened
2 whole egg whites, slightly beaten
1 teaspoon vanilla extract
1 1/2 cups unbleached
1 1/2 cups rolled oats
1 cup raisins
1 cup granulated sugar
1/2 cup brown sugar, packed
2 teaspoons cinnamon
1/2 teaspoon nutmeg
1 teaspoon baking soda

In a mixing bowl, combine margarine, egg whites, and vanilla extract. In another mixing bowl, combine flour, oats, raisins, sugars, cinnamon, nutmeg, and baking soda. Mix dry ingredients with wet ingredients just until well blended. Chill 1 hour, dough will be sticky. Preheat oven to 350. Roll a teaspoon of dough into a ball and place on prepared baking sheet. Repeat with remaining dough. Bake for 12 minutes or until light brown.

These cookies taste very good but the dough is very sticky and hard to work with because of the reduced fat margarine.
