Pepper Steak With Potatoes

Ingredients
5 mediums Red potatoes
1/2 cup Water
1 pound Beef sirlion
1 clove Garlic, minced
2 tablespoons Canola oil
1 medium Green pepper
1 small Onion, chopped
4 teaspoons Cornstarch
1 cup Beef broth
Preparation

Cut potatotes into 1/4inch slices, place the potatoes and water ina micorwaave-safe bowl, cover and micorvwave on high for 8-10 minutes or until tender. In a skillet, saute thinly sliced beef and garlic in oil until meat is no longer pink. Remove and keep warm, drain drippings. In same skillet, saute green petter and onion unitl crisp-tender. Return beef to the pan. Add potatoes and pepper, heat through. In small saucepan, combine cornstarch and broth until smooth. Bring to a boil, cook and stir for 2 minutes or unti thickened.
