Corn Salad

Ingredients

1/2 pound white corn
Pinch of sugar
1/2 cup fresh parsley, chopped
1/2 cup chives, chopped
1/2 pound tomatoes
1/2 pound fresh, cleaned shrimp
1 piece onion
3 tablespoons salad oil
2 tablespoons vinegar
4 teaspoons water
Salt to taste
Fresh ground pepper

Preparation

Dice the tomatoes, with or without skin, and mix with corn.

Cook, chill, and skin shrimp. Add to tomato and corn mix.

Chop parsley and chives and mix with remainder of ingredients as salad dressing.

Add dressing to corn/tomato/shrimp and mix thoroughly.

This salad is great in the summer when corn is in season, particularly for those who don't like eating corn on the cob.
