Cheese-Baked Potatoes

Ingredients

7 baking potatoes
2 teaspoons finely chopped onion
2 tablespoons butter
Mild Cheddar cheese, shredded

Preparation

Bake potatoes in hot 425 degree oven for 1 hour or until tender. Cool; cut in halves. Scrape pulp from shells and mash; add a little milk to make a light and fluffy mixture.

Saute onion in butter; stir into potato mixture along with salt and pepper to taste. Pile mixture into 12 potato shells (discard 2). Cover tops with shredded cheese; sprinkle with paprika. Place shells in flat freezing container. Cover tightly. Freeze.

Place frozen potatoes on baking sheet and bake in very hot 450 degree oven for about 25 minutes. 12 servings.
