Homemade Pasta

Ingredients

12 ounces Italian soft wheat flour or plain white 2 egg yolks
dash olive oil
pinch salt
3 beaten eggs

Preparation

On a cool worktop, mix all ingredients except beaten eggs together with your hands until you have a tacky dough. Add beaten eggs and continue kneading until you have a smooth and pliable dough. Cover and leave to rest for a good half hour.

Roll out on a floured surface and cut to the size required.
