Cilantro Mojo Verde

Ingredients
1 head of garlic, chopped
1/2 hot red or green pepper, seeded and minced
1 bunch fresh cilantro, finely chopped
1 teapoon cumin seeds, toasted and ground
1/2 cup olive oil
vinegar, to taste
salt, to taste
Preparation

In a skillet over medium-high heat, lightly toast the cumin until fragrant.

Place seeds in a mortar and mix until ground.

Add the chopped garlic, finely chopped coriander, seeded and chopped pepper and a little salt, blending these ingredients thoroughly.

Pour in half a cup of oil, vinegar to taste, a little cold water and mix well.
