Pommes Lyonnaise

Ingredients

2 tablespoons olive oil
2 tablespoons butter
1 lrg pale mild or Spanish onion, thinly sliced
few sprigs thyme, picked from the stems
1 teaspoon caraway seeds
sea salt and freshly ground black pepper

Preparation

Put the potatoes in a pan of lightly salted boiling water and cook for 15 minutes until three-quarters cooked. Drain well, patting dry, if necessary.

Return pan to medium heat. Tip in the oil, butter, onion, thyme and car- away. Stir to coat and cook over medium heat for a few minutes until soft but not colored. Stir in the potatoes and season. Cover and cook over gently heat for 15-20 minutes, shaking occasionally, until tinged with gold.

Serve immediately.
