In Scotland, the lucrative venison market is flourishing. Deer farmers cant keep up with demand, something that Scottish Venison Partnership, an organization that promotes the meat, would like to change.
According to SVP, there need to be 20 times as many deer farms in Scotland, to supply the market, or Scotland will lose money to importers , such as New Zealand deer farmers, who will fill in the gaps.
There are approximately 30 deer farms in Scotland today, the first one started in 1973. The farms are divided into calf producers and finishers, depending on where they are located in the country.
