Stuffed Peppers Slovak-Style
Ingredients
4 green bell peppere
1 1/2 lbs. 93% lean ground beef
1 egg
3/4 cup instant rice
1 48 ounce can tomato juice
Salt and pepper to taste
Preparation

In a large mixing bowl, mix ground beef, rice, egg, and salt and pepper to taste.

Work gently with hands just until combined.

Cut tops off of peppers and seed. Save the tops of the pepper to add to the cooking pot.

Stuff the peppers lightly with beef mixture, overstuffing will cause the peppers to burst.

In a large pot or Dutch oven, add the can of tomato juice and stuffed peppers.

If any beef mixture remains, make small meatballs and add to the pot along with the reserved pepper tops.

Cover pot with lid and simmer on low-medium heat for approximately 1 1/2 hours,

Stir gently occasionally.

Serve with fresh tossed salad, and a crusty bread.

This family recipe is so easy so delicious, and loved by all who try it! This was a recipe my grandmother cooked in the House of Prague in Chezchoslovakia over 80 years ago.
