This recipe was entered in The Foodista Best of Food Blogs Cookbook contest, a compilation of the world’s best food blogs which was published in Fall 2010.

Ingredients

2 cups oats
1 cup healthy cereal (I used Wheaties Fuel)
1/4 cup crasins
1/4 cup dark chocolate chips
3 tablespoons wheat germ
2 tablespoons flax seed

Preparation

Put all ingredients other than the peanut butter in a large bowl, melt peanut butter in microwave (1-2 minutes), pour over top and mix. Pour into a 9x13 baking pan sprayed with nonstick spray. Press firmly and bake at 350 for 20 minutes.

Immediately flip onto parchment or wax paper, cool for 5 minutes and slice. Don't cool any longer than 5 minutes or they will crumble when cut.

Store in tightly sealed container or wrap individually in plastic wrap if they are for on the go.

I've been working like a mad scientist to come up with the perfect homemade protein bar. I make little changes with each batch making it a little more and more healthy each time - this is the best yet! Very healthy, very filling, jam packed with protein and absolutely delicious!
