Spice Cake Truffles

Ingredients
3 cups spice cake scraps
1/2 pound tempered milk-chocolate (may also use candy melts if desired)
dash of cinnamon or ground cloves
Preparation

Using your hands, crush the cake scraps until you have fine crumbs

Continue to add swiss meringue until the cake crumbs will form into a ball and hold together

Place baking sheet in a pre-heated 300 degree oven and bake for 5 minutes (this is to form a slight crust on the cake truffle to aid in dipping)

Allow chocolate to set and enjoy!

About
These are wonderful one or two bite confections. Create your own cake truffle flavors by using other cake and filling combinations (e.g. chocolate cake with praline paste, dipped in dark chocolate and sprinkled with chopped hazelnuts). The flavor possibilities are endless!
