Turkey Dog Chili Mac

Ingredients
1 medium onion, diced
1 carrot, grated- yep, we snuck a carrot into chili!
2 cloves garlic, minced
2 tablespoons olive oil
2 tablespoons chili powder
2 teaspoons cumin
1 teaspoon oregano
1/4 cup liquid- water/broth
28 oz can of crushed tomatoes
6 oz can of tomato paste
16 oz cans spiced chili beans
1 package turkey hot dogs, cut in bite size pieces
16 ounces pkg noodles
Preparation

Saute the onion and carrot in the oil until semi-tender, about 3 - 4 minutes.

Add garlic and spices, cook an additional 3 – 4 minutes until veggies are tender and spices are starting to stick to the bottom.

Add the liquid to deglaze the pan.

Once the liquid is absorbed into the veggies, add the beans, crushed tomatoes and tomato paste.

Heat through and add the hot dogs.

Let simmer while the noodles are cooking.

Prepare noodles according to package directions.

To serve, pour the chili over the noodles. Garnish with Parmesan cheese.....chow down!
