Pumpkin Spice Pancakes

Ingredients
1 1/4 cups all purpose flour
2 tablespoons brown sugar
2 teaspoons baking powder
1/4 teaspoon salt
1/4 teaspoon cinnamon
1/4 teaspoon allspice
1/4 teaspoon nutmeg
1 cup milk
1 teaspoon vanilla
1/2 cup pumpkin puree
1 large egg
2 tablespoons melted butter
Preparation

Whisk together all the dry ingredients in a medium bowl.

In a separate bowl, combine the milk, pumpkin, egg, vanilla, and butter.

Pour all at once into dry ingredients and mix until just combined.

Batter may still be lumpy.

Heat griddle or nonstick pan to medium heat.

The batter is quite thick, in fact I added a dash more milk and they were still super thick and fluffy!

Turn when bubbly and sides look dryish.

Serve with nuts, butter, whipped cream, maple syrup, or even plain!

I saw this recipe on Pennies on a Platter and being the pumpkin lover that I am, I had to make them!
She got the recipe from Annie’s Eats, who got it from Joy the Baker, who got it from The Martha.
I’m sure that we have each changed it slightly to suit ourselves, and they’re delicious any which way!
