Colman’s Maryland Crab Cakes

Ingredients

1 pound Crabmeat, picked over to remove shell
1 egg
3 tablespoons celery, finely diced
2 tablespoons fresh lemon juice
2 tablespoons chopped parlsley
1 tablespoon chopped dill
1 tablespoon minced shallot

Preparation

Blend all ingredients except for crabmeat and bread crumbs.

Blend in crabmeat and bread crumbs gently until incorporated. Do not overmix.

Chill for one hour.

Form into 8 3”x3” patties and sauté in olive oil until golden brown.

Serve with tartar sauce.
