Lamb Stir Fry

Ingredients

2 pounds of Lamb Chops
2 Mediums Sized Carrots
Quarter of an Onion
2 tablespoons of Soy Sauce
3 Cloves of Garlic
1 tablespoon of Olive Oil

Preparation

PREPARATION :Take off excess fat of the lamb chops and cut into bite size pieces.

Thinly slice the bell peppers, carrots and chilli peppers.

Cut the onion into thick wedges

Wash and dry the Bok Choy.

Separate the stems from the leaves.

Cut the stems into chunks and the leaves as well.

Thinly slice the garlic and ginger root.

COOKING: In a shallow fry pan heat the oil on medium to high heat.

Once oil is nice and hot add the lamb chops and stir fry till the meat tender and cooked .This should take about 5 to 7 minutes.

Once the lamb is done add the ginger, garlic, chilli pepper, Bok Choy stems and the carrots.

Stir for few minutes. You don’t want to overcook the vegetables because when you eating them you want to taste the crispiness and the freshness of the vegetables.

Now add the red bell pepper and the Bok Choy leaves and soy sauce .Give it a good stir.

Take off stove and there you have it, nice fresh tasty lamb stir fry MMMM.

I am not a red bell pepper fan so before I add the red bell pepper to the dish I take usually take a portion of the dish out for myself :)

You may add any other vegetable of your choice to this tasty dish.

Personally I like lamb chops with bone in for my stir fry cause i like the flavour of the bones but usually boneless lamb is preferred for this yummy dish.

Growing up in the islands we had an abundance of fresh vegetables and fresh local meat. I miss that here where I am now.

Back home I could just go 10 minutes down the road and buy fresh chicken, goat or duck LOL.

The other meat that was readily available was lamb .Lamb is one of my favourite meats that I enjoy cooking and eating as well.

Today I was craving some lamb chop suey or we call it stir fry out here :) .I went down to the local supermarket and bought some lamb chops to prepare my lamb stir fry.

After picking up the lamb chops, on my way home I also stopped at the nice farm market where I picked up some fresh red peppers, Bok Choy, fresh ginger and fresh carrots.

Lamb stir fry was half way on to my hungry tummy mmm.
