Mixed Mushroom Risotto

Ingredients

200 grams chestnut mushrooms sliced thickly
100 grams closed cup mushrooms sliced thickly
1 litr of veggie stock
1 small onion, or half a large onion finely chopped
75 grams butter
1 clove garlic mashed
1 teaspoon thyme dried (or 2 of fresh)
450 grams risotto rice
salt and pepper to taste

Add onions and garlic

Add mushrooms

Add wine and thyme

When this has absorbed add rice

Cook for 2-3 mins and start adding the sock

Add a little at a time and wait until its absorbed before adding more

This will take 15-18 mins

Once complete add the cheese stir and let sit for 2 mins
