Apple, Raisin and Coffee Cupcakes

Ingredients
225 grams plain flour
1 teaspoon bicarbonate of soda
75 grams unsalted butter
175 grams brown sugar
1/2 cup coffee (either made with instant or brewed coffee)
6 tablespoons stewed apple
3 cloves , ground
1 egg

If stewing the apple yourself, put this on first

Preheat the oven to 180 degrees celsius (I know the recipe says 160 but I found that they just weren't cooking at this temperature and did much better at 180) and put some cupcake liners in a cupcake or muffin tin.

Sift flour with bicarb soda and set aside.

Serve with a nice cup of tea or coffee or to your party guests.

I made these for a bbq, they were quick and simple to make. they didn't involve any fancy equipment and I didn't even need an electric whisk. You just mix it all up in a saucepan and then pour it into the cupcake liners. Everyone at the bbq loved these and there were none left over at the end. I iced with chocolate buttercream icing but I think a coffee icing would also be nice.
I made my own stewed apple as I couldn't find a tin of it in the supermarket - it was very simple, I cored, peeled and chopped 1 apple and then added 2 tbsp sugar and enough water to cover the apple to a saucepan and just stewed on a low heat until the apple was quite mushy and the water mostly evaporated.
