Steak Sandwiches With Caramelized Peppers, Onions and Garlic

Ingredients
Caramelized Peppers and Onion
4 large bell pepper, thinly sliced
1 large red onion, thinly sliced
6 cloves garlic, peeled, whole
1 tablespoon olive oil
1 tablespoon balsamic vinegar
salt and pepper
Steaks
2 tablespoons fat free mayonnaise
1 tablespoon worcestershire sauce
grill seasoning
1 pint grape tomatoes, halved
1 large cucumber , English, cubed
2 tablespoons white balsamic vinegar
1 tablespoon parsley, minced
Preparation

Preheat oven to 400.

Combine bell pepper, garlic, onion, balsamic vinegar, olive oil and salt and pepper to your taste. Spread on a cookie sheet sprayed with cooking spray. Roast in oven for 30 to 40 minutes, stirring frequently until tender and caramelized.

In the meantime, combine tomato, cucumber, white balsamic vinegar, garlic oil, parsley and salt and pepper to taste in a bowl and refrigerate to blend flavors.

Slice beef on a diagonal into thin slices and top the bottom half of the bun with beef and caramelized peppers.

Serve with salad.

About
Every so often I’m in need of beef. I don’t need much, just a few slices of a nice, juice steak. Nothing wrong with that. Beef can be part of a healthy eating plan as long as it’s a lean cut of beef, and you don’t eat it every night.
This steak sandwich satisfied my beef craving. A few slices on my favorite Orowheat Sandwich Thins with some really great caramelized peppers and onions, and I was a happy camper.
With light and refreshing tomato and cucumber salad on the side, this meal came in under 400 calories.
