Greek Turkey Burgers

Ingredients

4 Pitas (with pockets for stuffing)
1 pound Ground turkey (grab the 99% fat free if available)
1 Egg
1/4 teaspoon Salt
2 tablespoons Greek Seasoning
OR, if you can't find Greek Seasoning,
1/4 cup Loosely packed fresh mint leaves and
1 tablespoon Oregano
(But, despite the fact that I usually like fresh herbs, I really like the McCormick's Gourmet Selection Greek seasonings better
Tzaziki sauce
cup grated cucumber (drained)
3 cloves garlic minced
1 teaspoon Fresh lemon juice (bottled if you must)
1 tablespoon Chopped mint leaves
Salt and pepper to taste
3 Roma Tomatoes, sliced to desired thickness
1/2 cup or so Sliced Red Onion (I like lots)

Preparation

Cut off 1/3 piece of each pita - take those pieces and toss in food processor or grate on the fine side of grater to make bread crumbs.

In large mixing bowl, mix crumbs, chicken, feta cheese, egg, greek seasoning (or mint & oregano) salt and pepper until just combined.

Shape turkey mixture into 4 burgers - eyeball your pitas and make sure your burgers will fit in the pockets!

Over medium heat, heat frying pan. Add burgers and cook about 10 minutes or until browned on both sides and cooked through.

While burgers are cooking, mix ingredients to tzaziki sauce in separate bowl..

To serve, fill each pita with lettuce, tomatoes, a burger, and tzaziki sauce to taste.
