Glazed Oatmeal Raisin Cookies

Ingredients

DOUGH
1 teaspoon baking soda
1 teaspoon ground cinnamon
1/4 teaspoon salt
1 1/2 cups raisins
1 cup (2 sticks) butter, softened
2 teaspoons vanilla extract
GLAZE
6 tablespoons butter
1/4 cup milk
1 cup confectioners’ sugar, sifted
1 teaspoon vanilla extract

Preparation

Preheat oven to 350ºF. Have ready lightly greased cookie sheets.

Sift together the flour, baking soda, cinnamon and salt. Stir in the raisins and pecans. Set aside.

In large mixing bowl, combine the oats, 2 cups brown sugar, butter, eggs and vanilla extract and beat with mixer on low speed until well mixed. Gradually add the flour mixture. Mix just until blended.

Drop by rounded tablespoons, 2-inches apart, on prepared cookie sheets. Bake for 10-12 minutes or until edges are lightly browned. Let stand for two minutes on cookie sheets then remove to wire racks to cool completely.

GLAZE: In small saucepan, melt the butter over medium heat. Stir in the brown sugar and milk. Bring to boil, stirring constantly. Remove from heat and stir in the confectioners’ sugar and vanilla. Drizzle glaze over cooled cookies. Allow glaze to set. Store in airtight container. Makes about 48 cookies.
